Strawberry matcha is our top-selling seasonal drink. Real strawberries macerated overnight with a small amount of cane sugar (not syrup, not artificial flavoring), topped with 4g of ceremonial-grade matcha whisked fresh, oat milk, and ice. The color happens naturally, the strawberry compote settles at the bottom, matcha layers on top. Available spring through early summer while strawberries are in season locally.
The layers are what makes this drink. Take a sip through a straw and you'll get a mix of the strawberry compote from the bottom and the matcha-milk layer from the top. Stir it together if you want a uniform pink-green color. Both approaches work.
Real strawberries, not syrup. Most cafes making a 'strawberry matcha' pour a bright pink strawberry syrup and call it a day. Ours starts with actual berries, we macerate them overnight with cane sugar so they break down into a compote. The color is muted pink, not neon; the flavor is real fruit, not candy.
Strawberry matcha runs March through June, when strawberries are actually in season and worth the price. Off-season we don't fake it with frozen fruit or syrup, we rotate to other seasonal drinks (rose matcha in winter, lavender-honey matcha in fall, matcha lemonade in summer). The seasonal rotation is one reason regulars keep coming back.

Oat milk is the default and what most customers choose. Almond milk works if you want the strawberry more forward. Whole milk makes the drink richer but slightly heavier. Coconut milk is not recommended for this drink, the flavors clash.

Medium sweet, mostly from the fresh strawberries, less than a typical flavored coffee drink. Ask for less sugar in the macerated berries if you want it tarter.
