Every matcha drink at Café Mia is made the same way: real ingredients, fresh whisking, no shortcuts. Here's the full four-step process, in the photos we took behind the counter this morning.
We start with whole fresh fruit, blueberries, bananas, strawberries, dragonfruit, purple sweet potato, whatever the drink calls for. This is what most cafes replace with a squeeze bottle of colored syrup. We don't. Real fruit is more expensive, takes longer to prep, and needs to be replaced daily. It's also what makes the drink taste like an actual food and not like a candy.
The whole fruit gets blended into a smooth puree, no added sugar, no artificial color. The color you see in the finished drink comes entirely from what's naturally in the fruit. Then large-cube ice on top (small pellet ice dilutes the drink too fast; the larger cubes hold the temperature without watering it down).
Cold oat milk goes on next. Poured slowly over the ice so it forms a distinct middle layer between the fruit base and the matcha to come. Oat milk is our default because it complements matcha's slight bitterness better than any other option, the natural sweetness rounds out the tea's edges. Almond, coconut, or whole dairy work too; all free (no upcharge for plant milk).

Meanwhile at the whisking station: 4g of A-Grade Uji matcha sifted into a ceramic bowl. 2oz of 175°F water added (never boiling, it scorches the matcha). Bamboo chasen (traditional Japanese whisk) worked in a W-motion for 25 seconds until a bright green foam forms on top. The whisked matcha gets poured slowly over the milk layer to sit on top. Every step happens per order, no pre-batching, no dispensing from a bottle, no shortcuts.
The finished drinks in the last photo are colored entirely by real ingredients. The vibrant blue is blueberry with a hint of butterfly pea (a natural blue tea flower, no artificial dye). The green is A-Grade Uji matcha over banana. The purple is strawberry with blueberry and dragonfruit. Photographed under normal cafe lighting, no filter, no color correction.

Real fruit gives you three things syrup can't: (1) natural color that photographs beautifully without any filter, (2) natural sweetness with fiber and antioxidants instead of just sugar, and (3) actual fruit flavor that lets the A-Grade Uji matcha come through instead of hiding it. Syrup is faster and cheaper, which is why most cafes use it. We use fresh fruit because the finished drink tastes fundamentally better.
Between 90 seconds (standard iced matcha latte) and 3 minutes (Pink Matcha Dragonfruit or Purple Matcha Sweet Potato, the ones with fruit puree base). Every drink is made per order. We don't pre-batch and we don't dispense from a squeeze bottle.
