Oat milk in matcha: smooth, neutral, lets the matcha flavor lead. Almond milk in matcha: lighter, thinner, matcha more prominent. Coconut milk: distinctive and polarizing. Whole milk: richer, more traditional. For 90% of matcha drinkers, oat is the best default. Almond is for when you want maximum matcha flavor. Roughly 70% of the matcha drinks we make use oat milk. It's the default for good reasons: oat milk has natural sweetness, smooth texture, and a neutral flavor that gets out of the way. The matcha leads; the milk supports. In an iced matcha latte specifically, oat produces the smoothest mouthfeel.
Almond milk is thinner and less sweet than oat. That means less mouthfeel, but also less interference with the matcha flavor. If you love the taste of pure matcha and want the milk to be almost invisible, almond is the pick. Almond also works well in hot matcha lattes where you want the drink lighter.
Coconut milk in matcha is polarizing. It's rich, has a distinctive tropical flavor, and either delights people (they order it every time) or overwhelms them (matcha ends up hidden). Try it once. If you love it, you love it. If not, switch back to oat. We don't push coconut on first-time matcha drinkers.

Whole milk (dairy) is the traditional matcha latte base and produces the richest version. If you love a full-fat cappuccino or latte with coffee, whole milk in matcha will feel familiar. Slightly heavier than oat, more mouthfeel, less clean-tasting on the finish.
Order sweetness: coconut milk (naturally sweet from the coconut) > oat milk (mildly sweet from oats) > whole milk (neutral) > almond milk (thinnest, least sweet). If you want to add sugar, ask for a half-pump of cane syrup. If you want it sweeter without adding sugar, oat is the best base.
Iced matcha: oat milk is best (smoothness in cold), almond second, whole milk third, coconut for adventurers. Hot matcha: whole milk if you want tradition, oat if you want smooth, almond if you want the matcha most prominent. We'd rank oat as the strongest default for both iced and hot.
